Lime Kiss Fish or Chicken Marinade

  • 2 Tablespoons Lime Kiss
  • 2 Tablespoons California Olive Oil

Use on 2 piece of Swordfish, Shark, Chilean Sea Bass or Alaskan Halibut. The alternative is to use 2 chicken breasts, ½ lb. each, but not exceeding 1 lb. Each piece of fish should be about ½ lb. or less and serve one person.   It’s now your choice to grill, sauté or broil as desired. Use a meat/poultry thermometer to check for doneness.

Lime Kiss Beef Marinade for Steaks

  • 3 Tablespoons Lime Kiss
  • 4 Tablespoons Balsamic Vinegar
  • 2 Tablespoons California Olive Oil
  • 7 Turns of course ground black pepper
  • 1 clove California Garlic finely chopped (optional)

Place meat in shallow glass pan. Rub meat with marinade mixture, coating all sides with marinade.  Cover and refrigerate, allowing marinade to absorb for at least two hours.  Remove meat from refrigerator and let it warm on counter for at least 30 minutes before grilling or broiling to desired temperature.  Remember to let the meat stand for a brief time, 2-3 minutes after grilling to allow juices to re-absorb.
